Food Curator, Culinary Archivist & Home Cook from the Heart of Türkiye
"Every recipe is a letter written by a grandmother who may no longer be here — it deserves to be read, remembered, and cooked."
— Mihriban Özkan
Mihriban Özkan grew up in Gaziantep — a city many consider the culinary capital of Türkiye — where the scent of red pepper paste drying on rooftops and the rhythmic sound of copper-smiths filled every childhood memory. Her mother cooked from memory; her grandmother from even older memory still. At the age of seven, she began writing down the recipes she witnessed in small school notebooks, afraid that one day those hands would stop, and the knowledge would vanish with them.
Those notebooks became the seed of mihribanozkan. Over two decades, Mihriban travelled through the regional kitchens of the Black Sea coast, the Aegean highlands, Central Anatolian villages, and the southeastern provinces, collecting recipes not from restaurants or cookbooks, but directly from the women and men who still cook by instinct and season. She has sat in village courtyards in Kastamonu learning to make taş ekmeği, and spent winter evenings in Siirt listening to elders describe spice combinations passed down through at least four generations.
By profession, Mihriban is a literature teacher — which is perhaps why she approaches food the way a writer approaches a manuscript: with patience, precision, and a deep respect for the original voice. She believes that a recipe stripped of its context is only half the story. On this site, you will always find not just the ingredients and method, but the region, the occasion, and often the family who first shared it with her.
mihribanozkan carries no advertisements, no sponsored content, and no affiliate links. It was built — and continues to grow — purely out of love for a culinary heritage that deserves to be documented before it fades. Every recipe published here has been tested in a home kitchen, just as it was intended to be cooked.
mihribanozkan was built around a few uncompromising principles. They shape every recipe we document, every story we tell, and every choice we make about how this site operates.
Recipes Rooted in Truth
Every recipe on mihribanozkan is documented from original sources — handwritten notebooks passed down through generations, trusted elders in village kitchens, and regional cookbooks that rarely leave their home provinces. We never simplify, Westernize, or commercially adapt a dish. If a recipe calls for a specific regional spice blend or a wood-fired technique, we say so, and we tell you why it matters.
Rescuing the Forgotten Table
Türkiye's culinary landscape stretches from Black Sea highlands to Southeastern Anatolia, from Aegean olive groves to the plains of Konya. Hundreds of regional dishes risk disappearing as urbanization accelerates and younger generations move away from ancestral kitchens. mihribanozkan focuses deliberately on these lesser-known treasures — the herb-stuffed flatbreads of Kastamonu, the sour grape molasses stews of Gaziantep, the forgotten pilaf variations of Diyarbakır — giving them the careful, loving documentation they deserve.
Knowledge Has No Price Tag
There are no advertisements on mihribanozkan. No sponsored content, no brand partnerships, no products for sale, and no paywalls that lock recipes behind a subscription. Culinary heritage belongs to everyone. This is a labor of love — a personal archive made public so that anyone, anywhere in the world, can learn to cook a bowl of tarhana soup the way it was made in a small Anatolian village fifty years ago. The only currency here is curiosity.
"A cuisine that is not written down is a cuisine that is already forgetting itself."
The principle behind every page of mihribanozkan.
Do you have a beloved family recipe you'd like to share, a correction to suggest, or a question about Turkish culinary heritage? We'd be delighted to hear from you. Every message is read personally by Mihriban.
